Spicy and crispy spinach pakoras are a popular Indian snack made from fresh spinach leaves dipped in a gram flour batter and deep-fried until golden brown. Here’s how you can make them:
Ingredients:
- 2 cups fresh spinach leaves, washed and chopped
- 1 cup gram flour (besan)
- 1 small onion, finely chopped
- 1-2 green chilies, finely chopped (adjust to your spice preference)
- 1/2 inch piece of ginger, grated
- 1 teaspoon cumin seeds
- 1/2 teaspoon garam masala
- 1/2 teaspoon red chili powder (adjust to your spice preference)
- 1/4 teaspoon turmeric powder
- Salt to taste
- Oil for deep frying
- Water (as needed)
- Chopped cilantro leaves (optional, for garnish)
Instructions:
Prepare the Batter:
- In a mixing bowl, combine gram flour, cumin seeds, garam masala, red chili powder, turmeric powder, and salt. Gradually add water and whisk until you have a smooth, lump-free batter with a thick but pourable consistency. It should coat the back of a spoon.
Add Vegetables:
- Add chopped spinach, chopped onion, green chilies, and grated ginger to the batter. Mix well until the vegetables are evenly coated.
Heat Oil:
- Heat enough oil in a deep frying pan or kadai over medium-high heat. To check if the oil is hot enough, drop a small amount of batter into the oil. If it sizzles and rises to the surface, the oil is ready.
Fry the Pakoras:
- Using a spoon or your hands, carefully drop spoonfuls of the batter into the hot oil. Fry a few pakoras at a time, making sure not to overcrowd the pan. Fry them until they turn golden brown and crispy, about 3-4 minutes. Flip them occasionally for even cooking.
Drain and Serve:
- Use a slotted spoon to remove the pakoras from the oil and drain excess oil by placing them on a plate lined with paper towels.
Serve Hot:
- Sprinkle some chopped cilantro leaves on top for garnish, if desired. Serve the crispy spinach pakoras hot with chutney or sauce of your choice.
Enjoy your spicy and crispy spinach pakoras as a delicious snack or appetizer!
