Ingredients:

  • 1 whole leg of lamb (approximately 5-7 pounds)
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions:

  1. Prepare the Marinade:
    • In a bowl, mix together minced garlic, chopped rosemary, chopped thyme, lemon zest, lemon juice, olive oil, salt, and pepper to create a marinade.
  2. Marinate the Leg of Lamb:
    • Place the whole leg of lamb in a large dish or a resealable plastic bag.
    • Rub the marinade all over the lamb, making sure to coat it evenly.
    • Cover the dish or seal the bag and refrigerate for at least 4 hours or overnight for the flavors to infuse.
