Ingredients:

  • 1/4 cup honey
  • 1 vanilla bean or 1 teaspoon vanilla extract

Instructions:

  1. Prepare the Vanilla Bean:
    • If using a vanilla bean, split it open lengthwise, scrape the seeds, and set aside. If using vanilla extract, skip this step.
  2. Heat the Broth:
    • In a saucepan, warm the vegetable or chicken broth over low heat. Keep it warm throughout the cooking process.
  3. Sauté the Rice:
    • In a large, heavy-bottomed pot, melt 2 tablespoons of butter over medium heat. Add the Arborio rice and stir to coat the grains with butter.
  4. Deglaze with Wine:
    • Pour in the white wine and stir until it’s mostly absorbed by the rice.
  5. Add Vanilla:
    • If using a vanilla bean, add the scraped seeds to the rice. If using vanilla extract, add it now.
  6. Begin Adding Broth:
    • Begin adding the warm broth, one ladle at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding the next ladle.
  7. Continue Cooking:
    • Continue this process of adding broth and stirring until the rice is creamy and cooked to al dente texture. This typically takes about 18-20 minutes.
  8. Season:
    • Season the risotto with salt and black pepper.
  9. Add Honey:
    • Stir in the honey, ensuring it is well incorporated into the risotto.
  10. Finish with Butter and Parmesan:
    • Remove the pot from heat. Stir in the remaining 2 tablespoons of butter and the grated Parmesan cheese until creamy and well mixed.
