Egg Fried Rice:

Ingredients:

  • 2 cups cooked and cooled jasmine rice (preferably a day old)
  • 2 eggs, beaten
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1/2 cup chopped spring onions
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions:

  1. Prep Ingredients:
    • Ensure that the rice is cooked and cooled. Chop all vegetables and have them ready.
  2. Stir-Fry Vegetables:
    • Heat 1 tablespoon of vegetable oil in a large wok or pan. Add the mixed vegetables and stir-fry until they are tender-crisp. Remove the vegetables from the pan and set them aside.
  3. Cook Eggs:
    • In the same pan, add a little more oil if needed. Pour the beaten eggs into the pan and scramble them until just cooked. Remove the eggs and set aside.

    • Drizzle soy sauce, oyster sauce, and sesame oil over the rice mixture. Stir well to ensure everything is evenly coated. Season with salt and pepper to taste.
  7. Add Spring Onions:
    • Add chopped spring onions and stir-fry for an additional minute.
  8. Serve:

Ingredients:

  • 500g boneless chicken, cut into bite-sized pieces
  • 2 tablespoons yogurt
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon red chili powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons vegetable oil
  • Fresh coriander for garnish

Instructions:
