Goat Brain Masala:

Ingredients:

  • 500 grams goat brain
  • 2 onions, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chilies, chopped
  • 1 tablespoon ginger-garlic paste
  • 1/2 cup yogurt
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 3 tablespoons cooking oil
  • Fresh coriander leaves for garnish
  • Lemon wedges for serving

Instructions:

  1. Prepare Goat Brain:
    • Soak the goat brain in cold water for about 30 minutes. Gently remove the membrane covering the brain and cut it into small pieces.
  2. Parboil Goat Brain:
    • In a pot of boiling water, add a pinch of salt and parboil the goat brain pieces for 5-7 minutes. Drain the water and set aside.
  3. Cooking Base:
    • In a pan, heat oil over medium heat. Add chopped onions and sauté until golden brown.
  4. Add Aromatics:
    • Add ginger-garlic paste and chopped green chilies. Sauté for 2 minutes until the raw smell disappears.
  5. Add Tomatoes:
    • Add chopped tomatoes and cook until they are soft and oil starts to separate.
  6. Spice it Up:
    • Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well and cook for a couple of minutes.
  7. Yogurt Addition:
    • Whisk the yogurt and add it to the spice mix. Stir continuously to avoid curdling. Cook until the oil separates.
  8. Add Goat Brain:
    • Gently add the parboiled goat brain pieces to the masala. Be careful not to break them. Coat the pieces evenly with the masala.
  9. Simmer and Garnish:
    • Cover the pan and let it simmer for 10-15 minutes on low heat. Sprinkle garam masala and garnish with fresh coriander leaves.
  10. Serve:
  • Serve hot, garnished with more coriander leaves and lemon wedges on the side.
