
Here’s a recipe for Rice with Beef Qorma:
Ingredients:
For Beef Qorma:
- 500g beef, cut into small pieces
- 2 onions, finely sliced
- 2 tomatoes, chopped
- 1/2 cup plain yogurt
- 3-4 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 green chilies, chopped (optional)
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon garam masala powder
- Salt to taste
- Cooking oil or ghee for frying
For Rice:
- 2 cups Basmati rice, washed and soaked for 30 minutes
- 4 cups water
- 2-3 green cardamom pods
- 2-3 cloves
- 1-inch cinnamon stick
- Salt to taste
For Garnish:
- Fresh coriander leaves, chopped
- Fried onions (optional)
- Lemon wedges

Instructions:
- Heat some oil or ghee in a large pan or pressure cooker over medium heat. Add sliced onions and fry until golden brown.
- Add minced garlic, grated ginger, and chopped green chilies (if using). Saute for a minute until fragrant.
- Add the chopped tomatoes and cook until they turn soft and mushy.
- Add the beef pieces to the pan and mix well with the onion-tomato mixture.
- Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Stir to coat the beef evenly with the spices.
- Cook the beef on medium-low heat until it is browned and the oil starts to separate from the masala.
- Once the beef is browned, add plain yogurt to the pan and mix well. Cook for a few more minutes until the yogurt is well incorporated into the gravy.
- Add water as needed to achieve the desired consistency of the Qorma. Cover and cook until the beef is tender and cooked through. If using a pressure cooker, cook for about 15-20 minutes after the first whistle.
- While the beef is cooking, prepare the rice. In a separate pot, bring water to a boil. Add soaked rice, green cardamom pods, cloves, cinnamon stick, and salt. Cook until the rice is 80% done. Drain any excess water.
- Once the beef is cooked and the rice is almost done, layer the rice over the beef Qorma in the pan or pressure cooker. Sprinkle garam masala powder on top.
- Cover the pan or pressure cooker with a tight-fitting lid and cook on low heat for another 10-15 minutes until the rice is fully cooked and fluffy.
- Once done, gently fluff the rice with a fork and serve hot. Garnish with chopped coriander leaves, fried onions (if using), and lemon wedges on the side.
