Egg and Mixed Vegetables Curry Recipe

Ingredients:
- For Boiled Eggs:
- 4-6 eggs
- Water (for boiling)
- Salt (optional)
- For the Curry:
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 2-3 cloves garlic, minced
- 1-inch piece ginger, grated
- 2 tomatoes, chopped
- 1 cup mixed vegetables (carrots, peas, bell peppers, potatoes, etc.), chopped
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1-2 green chilies, slit (optional)
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 teaspoon red chili powder (adjust to taste)
- Salt to taste
- 1 cup water or vegetable broth
- Fresh cilantro, chopped (for garnish)
Instructions:
- Boil the Eggs:
- Place eggs in a pot and cover with water. Add a pinch of salt if desired.
- Bring to a boil, then reduce heat and simmer for 10-12 minutes.
- Remove from heat, drain, and transfer eggs to a bowl of cold water. Once cooled, peel the eggs and set them aside.
- Prepare the Curry:
- Heat vegetable oil in a large pan over medium heat.
- Add cumin seeds and mustard seeds. When they start to splutter, add the chopped onions.
- Sauté the onions until they turn golden brown.
- Add minced garlic, grated ginger, and slit green chilies. Sauté for another 2-3 minutes until fragrant.
- Add the chopped tomatoes and cook until they soften and oil starts to separate.
- Add turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Mix well and cook for a minute.
- Cook the Vegetables:
- Add the mixed vegetables to the pan. Stir well to coat the vegetables with the spices.
- Add water or vegetable broth, cover, and simmer until the vegetables are tender (about 10-15 minutes).
- Combine Eggs and Vegetables:
- Cut the boiled eggs in half or quarters and add them to the curry.
- Sprinkle garam masala over the curry and gently stir to combine.
- Simmer for an additional 5 minutes to let the flavors meld together.
- Garnish and Serve:
