Bihari Mutton Kabab Recipe with Serving Salad

Ingredients for Bihari Mutton Kabab:

  • 500g mutton (cut into thin strips)
  • 2 tablespoons raw papaya paste (meat tenderizer)
  • 2 tablespoons yogurt
  • 2 tablespoons mustard oil
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 1 tablespoon red chili powder
  • 1 tablespoon garam masala powder
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon black pepper powder
  • 1 teaspoon salt (or to taste)
  • 2 tablespoons gram flour (besan), toasted
  • Juice of 1 lemon
  • Bamboo skewers (soaked in water for 30 minutes)

Ingredients for Serving Salad:

  • 1 small red onion, thinly sliced
  • 1 cucumber, thinly sliced
  • 1 tomato, chopped
  • Fresh coriander leaves, chopped
  • Mint leaves, chopped
  • Juice of 1 lemon
  • Salt and black pepper to taste

Instructions:

  1. Prepare the mutton:
    • In a mixing bowl, combine the mutton strips with raw papaya paste. Mix well and let it marinate for 1 hour to tenderize the meat.
  2. Make the kabab marinade:
    • In another bowl, combine yogurt, mustard oil, ginger paste, garlic paste, red chili powder, garam masala powder, ground cumin, ground coriander, black pepper powder, salt, toasted gram flour, and lemon juice.
    • Add the marinated mutton to the marinade and mix well. Ensure the meat is evenly coated with the spices and other ingredients.
    • Cover the bowl and let the mutton marinate in the refrigerator for at least 4-6 hours, or overnight for the best flavor.
  3. Skewer and grill the kababs:
    • Preheat the grill to medium-high heat.
    • Thread the marinated mutton strips onto the soaked bamboo skewers.
    • Grill the kababs on each side for about 5-7 minutes, or until the meat is cooked through and nicely charred.
  4. Prepare the serving salad:
    • In a mixing bowl, combine the sliced red onion, cucumber, and chopped tomato.
    • Add chopped coriander and mint leaves.
    • Squeeze lemon juice over the salad and season with salt and black pepper to taste.
    • Toss the salad to mix all ingredients.
  5. Serve:
    • Once the kababs are grilled and cooked through, remove them from the skewers.
    • Serve the spicy and juicy Bihari mutton kababs with the fresh serving salad on the side.
    • You can also add mint chutney or yogurt sauce for extra flavor.
