Buffalo Chicken with Sauce Recipe

Ingredients:

For the Chicken:

  • 2 lbs chicken wings or boneless chicken tenders
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil for frying

For the Buffalo Sauce:

  • 1/2 cup hot sauce (such as Frank’s RedHot)
  • 1/2 cup unsalted butter
  • 1 tablespoon white vinegar
  • 1/4 teaspoon Worcestershire sauce
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional, for extra heat)
  • 1 tablespoon honey or brown sugar (optional, for a touch of sweetness)

Instructions:

Prepare the Chicken:

  1. Mix the Dry Ingredients:
    • In a bowl, combine the flour, garlic powder, paprika, salt, and black pepper.
  2. Coat the Chicken:
    • Dredge the chicken wings or tenders in the flour mixture, ensuring they are evenly coated. Shake off any excess flour.
  3. Heat the Oil:
    • In a deep frying pan or skillet, heat about 1-2 inches of vegetable oil over medium-high heat until it reaches 350°F (175°C).
  4. Fry the Chicken:
    • Carefully add the chicken to the hot oil in batches, avoiding overcrowding. Fry for 10-12 minutes, turning occasionally, until the chicken is golden brown and cooked through.
    • Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).
    • Transfer the fried chicken to a paper towel-lined plate to drain any excess oil.

Prepare the Buffalo Sauce: 5. Melt the Butter:

  • In a saucepan over low heat, melt the butter.
  1. Add the Hot Sauce and Seasonings:
    • Once the butter is melted, stir in the hot sauce, white vinegar, Worcestershire sauce, garlic powder, and cayenne pepper (if using).
  2. Simmer the Sauce:
    • Allow the sauce to simmer for a few minutes, stirring occasionally, until all ingredients are well combined. If you prefer a slightly sweeter sauce, add honey or brown sugar at this stage and stir until dissolved.

Combine the Chicken and Sauce: 8. Coat the Chicken:

  • Place the fried chicken in a large bowl. Pour the warm buffalo sauce over the chicken and toss until the chicken is fully coated in the sauce.

Serve: 9. Plate and Enjoy:

  • Serve the buffalo chicken immediately with celery sticks, carrot sticks, and a side of ranch or blue cheese dressing for dipping.

Tips:

  • Baking Option: For a healthier alternative, you can bake the chicken instead of frying. Preheat your oven to 400°F (200°C) and bake the coated chicken on a greased baking sheet for 20-25 minutes, turning halfway through, until crispy and cooked through.
  • Adjusting Spice Level: Adjust the amount of cayenne pepper in the sauce to control the heat level according to your preference.
  • Double Sauce: If you love extra sauce, double the buffalo sauce recipe and serve some on the side for additional dipping.
