
Ingredients:
– 1 pound chicken breast, sliced into bite-sized pieces
– 12 ounces pasta of your choice
– 1 tablespoon olive oil
– 1 tablespoon butter
– 1 onion, chopped
– 3 cloves garlic, minced
– 1 red bell pepper, sliced
– 1 cup sliced mushrooms
– 2 cups spinach leaves
– 1 cup heavy cream
– 1/2 cup chicken broth
– 1/2 cup grated Parmesan cheese
– Salt and black pepper to taste
– Fresh parsley, chopped (for garnish)
Instructions:
1. Cook pasta according to package instructions. Drain and set aside.
2. Season chicken with salt and black pepper. Heat olive oil and butter in a large skillet over medium heat. Add chicken and cook until golden brown and cooked through, about 8-10 minutes. Remove chicken from skillet and set aside.
3. In the same skillet, sauté onion and garlic until onion is translucent, about 2-3 minutes.
4. Add red bell pepper and mushrooms to the skillet and sauté until softened, about 5 minutes.
5. Stir in spinach leaves and cook until wilted, about 2 minutes.
6. Pour in heavy cream and chicken broth, bring to a simmer and cook until slightly thickened, about 5 minutes.
7. Stir in Parmesan cheese until melted and well combined.
8. Add cooked pasta and chicken to the skillet and toss to coat in the sauce.
9. Serve hot, garnished with fresh parsley.
