Blueberry Cheesecake with Fruit Cocktail Recipe

This delicious and easy-to-make dessert combines the creamy richness of cheesecake with the fruity sweetness of blueberries and a refreshing fruit cocktail topping.


Ingredients

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted

For the Cheesecake Filling:

  • 16 oz (450 g) cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup sour cream
  • 1 tablespoon lemon juice
  • 1 cup fresh or frozen blueberries

For the Fruit Cocktail Topping:

  • 1 can (15 oz) fruit cocktail, drained
  • ½ cup blueberry preserves or jam
  • 1 teaspoon cornstarch (optional, for thickening)

Instructions

1. Prepare the Crust:

  1. Preheat your oven to 325°F (165°C).
  2. In a bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until evenly combined.
  3. Press the mixture into the bottom of a 9-inch springform pan, forming an even layer.
  4. Bake the crust for 8-10 minutes, then set aside to cool.

2. Make the Cheesecake Filling:

  1. In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy.
  2. Add the eggs, one at a time, beating well after each addition.
  3. Mix in the vanilla extract, sour cream, and lemon juice until fully incorporated.
  4. Gently fold in the blueberries with a spatula.

3. Bake the Cheesecake:

  1. Pour the filling over the prepared crust and smooth the top with a spatula.
  2. Place the springform pan on a baking sheet and bake for 45-50 minutes or until the center is set but slightly jiggly.
  3. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour to prevent cracking.
  4. Remove from the oven and refrigerate for at least 4 hours or overnight.

4. Prepare the Fruit Cocktail Topping:

  1. In a small saucepan, heat the blueberry preserves over low heat until slightly melted.
  2. Add the drained fruit cocktail and stir to coat. (If a thicker topping is desired, mix 1 teaspoon of cornstarch with 1 tablespoon of water, add it to the saucepan, and cook until thickened.)
  3. Let the mixture cool completely before using.

  1. Once the cheesecake is chilled, spread the fruit cocktail topping evenly over the surface.
