Ingredients:

– 500 grams boneless chicken, cut into bite-sized pieces

– 1 large onion, thinly sliced

– 1 large red bell pepper, thinly sliced

– 1 large green bell pepper, thinly sliced

– 1 large yellow bell pepper, thinly sliced

– 2-3 green chilies, thinly sliced (adjust to your spice preference)

– 3-4 tablespoons vegetable oil

– 2 tablespoons ginger-garlic paste

– 1 cup diced tomatoes (fresh or canned)

– 1 teaspoon cumin seeds

– 1 teaspoon ground cumin

– 1 teaspoon ground coriander

– 1/2 teaspoon turmeric powder

– 1 teaspoon chili powder (adjust to your spice preference)

– 1/2 teaspoon garam masala

– 1/2 cup plain yogurt

– Salt to taste

– Fresh cilantro (coriander leaves) for garnish

– Lemon wedges for serving

Marinade:

– 1/2 cup plain yogurt

– 1 tablespoon ginger-garlic paste

– 1/2 teaspoon ground cumin

– 1/2 teaspoon ground coriander

– 1/2 teaspoon chili powder

– 1/2 teaspoon turmeric powder

– 1 tablespoon lemon juice

– Salt to taste

Instructions:

1. In a bowl, combine all the marinade ingredients. Add the chicken pieces and coat them well with the marinade. Cover the bowl and let the chicken marinate in the refrigerator for at least 30 minutes (or up to 4 hours for more flavor).

2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the cumin seeds and let them sizzle for a few seconds.

3. Add the sliced onions and sauté until they become translucent and lightly browned.

4. Add the ginger-garlic paste and green chilies. Cook for a minute until the raw smell disappears.

5. Stir in the diced tomatoes and cook until they become soft and the oil starts to separate from the mixture.

6. Add the ground cumin, ground coriander, turmeric powder, chili powder, and salt. Cook the spices for a minute to release their flavors.

7. Lower the heat and add the marinated chicken to the skillet. Cook the chicken until it’s fully cooked and tender.

8. Stir in the sliced bell peppers and cook for a few more minutes until the peppers are slightly softened but still crunchy.

9. Pour in the plain yogurt and mix well. Cook for an additional 2-3 minutes, allowing the flavors to blend.

10. Sprinkle garam masala over the chicken jalfrezi and give it a final stir.

11. Garnish with fresh cilantro leaves.

12. Serve hot with steamed rice or naan bread, and offer lemon wedges on the side for squeezing over the dish.

Enjoy your delicious Chicken Jalfrezi!
