Dragon Fruit Cake Recipe:
Ingredients:

- 1 3/4 cups all-purpose flour

- 1/4 tsp salt
- 1/2 cup unsalted butter, room temperature

- For the Frosting:
- 1/2 cup unsalted butter, room temperature
- 4 oz cream cheese, room temperature
- 3 cups powdered sugar
- 1 tsp vanilla extract
- 1/4 cup dragon fruit puree
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
- Prepare the Cake Batter:
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In a separate bowl, cream the butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Add vanilla extract and mix.
- Add the dry ingredients in batches, alternating with buttermilk.
- Gently fold in the mashed dragon fruit.
- Bake the Cake:
- Divide the batter evenly between the prepared cake pans.
- Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
- Prepare the Frosting:
- In a bowl, cream together butter and cream cheese until smooth.
- Add powdered sugar gradually, beating until fluffy.
- Add vanilla extract and dragon fruit puree, mixing until smooth and well incorporated.
- Assemble the Cake:
- Once the cakes have cooled, spread a layer of frosting on top of one of the cakes.
- Place the second cake on top and frost the top and sides with the remaining frosting.
