Egg and Mixed Vegetables Curry Recipe

Ingredients:

  • For Boiled Eggs:
    • 4-6 eggs
    • Water (for boiling)
    • Salt (optional)
  • For the Curry:
    • 2 tablespoons vegetable oil
    • 1 large onion, finely chopped
    • 2-3 cloves garlic, minced
    • 1-inch piece ginger, grated
    • 2 tomatoes, chopped
    • 1 cup mixed vegetables (carrots, peas, bell peppers, potatoes, etc.), chopped
    • 1 teaspoon cumin seeds
    • 1 teaspoon mustard seeds
    • 1-2 green chilies, slit (optional)
    • 1 teaspoon turmeric powder
    • 1 teaspoon cumin powder
    • 1 teaspoon coriander powder
    • 1 teaspoon garam masala
    • 1 teaspoon red chili powder (adjust to taste)
    • Salt to taste
    • 1 cup water or vegetable broth
    • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Boil the Eggs:
    • Place eggs in a pot and cover with water. Add a pinch of salt if desired.
    • Bring to a boil, then reduce heat and simmer for 10-12 minutes.
    • Remove from heat, drain, and transfer eggs to a bowl of cold water. Once cooled, peel the eggs and set them aside.
  2. Prepare the Curry:
    • Heat vegetable oil in a large pan over medium heat.
    • Add cumin seeds and mustard seeds. When they start to splutter, add the chopped onions.
    • Sauté the onions until they turn golden brown.
    • Add minced garlic, grated ginger, and slit green chilies. Sauté for another 2-3 minutes until fragrant.
    • Add the chopped tomatoes and cook until they soften and oil starts to separate.
    • Add turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Mix well and cook for a minute.
  3. Cook the Vegetables:
    • Add the mixed vegetables to the pan. Stir well to coat the vegetables with the spices.
    • Add water or vegetable broth, cover, and simmer until the vegetables are tender (about 10-15 minutes).
  4. Combine Eggs and Vegetables:
    • Cut the boiled eggs in half or quarters and add them to the curry.
    • Sprinkle garam masala over the curry and gently stir to combine.
    • Simmer for an additional 5 minutes to let the flavors meld together.
  5. Garnish and Serve:
    • Garnish the egg and mixed vegetable curry with fresh chopped cilantro.
    • Serve hot with rice, roti, or naan.
