Ingredients:
- 2 cups full-fat milk
- 1/2 cup sweetened condensed milk
- 1/2 cup evaporated milk
- 1/2 cup powdered sugar (adjust to taste)
- 1/2 cup khoya (reduced milk solids)
- 1/4 cup chopped nuts (almonds, pistachios, cashews)
- 1/2 teaspoon cardamom powder
- A pinch of saffron strands (optional)
- Kulfi molds or small cups for freezing

Instructions:
- Prepare the Base:
- In a heavy-bottomed pan, bring the full-fat milk to a boil. Reduce the heat and simmer, stirring continuously to prevent the milk from sticking to the bottom of the pan.
- Add Condensed and Evaporated Milk:
- Once the milk has thickened and reduced to about half, add sweetened condensed milk and evaporated milk. Continue to simmer and stir.
- Add Khoya and Sugar:
- Grate or crumble the khoya and add it to the milk mixture. Stir well to combine. Add powdered sugar and continue to simmer until the mixture thickens further.

- Pour into Molds:
- Pour the kulfi mixture into kulfi molds or small cups, leaving a little space at the top for expansion during freezing.
- Freeze:
- Cover the molds with aluminum foil or lids. Insert ice cream sticks in the center if using molds with slots. Freeze the kulfi for at least 6-8 hours or overnight.
- Serve:
- Once the kulfi is fully set, remove it from the freezer a few minutes before serving to allow it to soften slightly. Unmold the kulfi by dipping the molds briefly in warm water.
- Garnish (Optional):
- Garnish with chopped nuts or a sprinkle of cardamom powder before serving.
