Homemade Strawberry Kulfi Recipe: A Delightful Indian Frozen Dessert

Strawberry Kulfi Recipe:

Ingredients:

– 2 cups fresh strawberries, washed and hulled

– 1 cup full-fat milk

– 1 cup condensed milk

– 1 cup heavy cream

– 1/4 cup powdered sugar (adjust to taste)

– 1/2 teaspoon cardamom powder

– 1 tablespoon chopped pistachios or almonds (optional, for garnish)

Instructions:

1. In a blender or food processor, puree the fresh strawberries until smooth. Set aside.

2. In a large heavy-bottomed saucepan, pour the full-fat milk and bring it to a boil over medium heat. Stir frequently to prevent sticking.

3. Once the milk starts boiling, reduce the heat to low and let it simmer for about 20-25 minutes. Stir occasionally to avoid forming a skin on the surface.

4. Add the condensed milk and heavy cream to the simmering milk. Stir well to combine and continue cooking on low heat for another 10-15 minutes until the mixture thickens slightly.

5. Now, add the strawberry puree to the milk mixture and mix thoroughly.

6. Stir in the powdered sugar and cardamom powder, adjusting the sweetness to your preference.

7. Continue cooking the mixture on low heat for another 5-7 minutes until it thickens further, resembling a custard-like consistency.

8. Remove the saucepan from the heat and let the mixture cool down to room temperature.

9. Once cooled, pour the kulfi mixture into individual kulfi molds or any small containers of your choice.

10. Cover the molds with aluminum foil or lids and insert popsicle sticks into the center of each kulfi.

11. Place the kulfi molds in the freezer and let them set for at least 6-8 hours, preferably overnight.

12. To serve, remove the kulfi molds from the freezer and let them sit at room temperature for a few minutes to slightly soften.

13. Gently unmold the strawberry kulfi by dipping the molds in warm water for a few seconds and then sliding the kulfi out onto a serving plate.

14. Garnish with chopped pistachios or almonds if desired.

15. Enjoy the delicious homemade strawberry kulfi as a refreshing and delightful dessert!

Note: If you don’t have kulfi molds, you can use small paper cups or any freezer-safe containers. Insert popsicle sticks into the center before freezing.
