Ingredients:

  • For the Madrouba:

    • 2 tomatoes, chopped
    • 2 tablespoons tomato paste
    • 1 teaspoon ground cumin
    • 1 teaspoon ground coriander
    • 1 teaspoon ground turmeric
    • 1 teaspoon ground cinnamon
    • 1 teaspoon ground cardamom
    • 1 teaspoon paprika
    • 1 teaspoon black pepper
    • 1 teaspoon salt
    • 1/2 cup plain yogurt
    • 6 cups chicken broth or water
    • 2 tablespoons olive oil
    • Fresh cilantro or parsley for garnish
  • For the Salad:
    • 2 cups mixed greens (lettuce, spinach, arugula)
    • 1 cucumber, diced
    • 1 tomato, diced
    • 1 red onion, thinly sliced
    • 1/4 cup fresh mint leaves
    • 1/4 cup fresh parsley, chopped
    • 2 tablespoons olive oil
    • 1 tablespoon lemon juice
    • Salt and pepper to taste

 

Instructions:

  1. Prepare the Chicken:
    • Heat olive oil in a large pot over medium-high heat. Add the chicken pieces and brown them on all sides. Remove the chicken and set aside.
  2. Sauté the Vegetables:
    • In the same pot, add the chopped onions and sauté until golden brown. Add the minced garlic and cook for another minute.
    • Stir in the chopped tomatoes and tomato paste. Cook until the tomatoes soften and the mixture is well combined.
