Mango and Strawberry Cake with Vanilla Cream Recipe

Ingredients:

For the Cake:

  • 2 1/2 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, room temperature
  • 2 cups granulated sugar
  • 4 large eggs, room temperature
  • 1 cup whole milk, room temperature
  • 2 tsp vanilla extract

For the Mango and Strawberry Filling:

  • 1 1/2 cups fresh strawberries, hulled and sliced
  • 1 1/2 cups fresh mango, peeled and diced
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice

For the Vanilla Cream Frosting:

  • 2 cups heavy whipping cream, cold
  • 1/2 cup powdered sugar
  • 2 tsp vanilla extract

Instructions:

Making the Cake:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Cream Butter and Sugar: In a large mixing bowl, beat the butter and sugar together until light and fluffy, about 3-5 minutes.
  4. Add Eggs: Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  5. Combine Wet and Dry Ingredients: Add the dry ingredients to the butter mixture in three parts, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.

  3. Frost the Cake: Spread the vanilla cream frosting evenly over the top and sides of the cake.
