Pistachio and Dates Cake Recipe

Ingredients:

  • 1 cup dates, pitted and chopped
  • 1 cup boiling water
  • 1 teaspoon baking soda
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup finely ground pistachios
  • 1/2 cup chopped pistachios (for garnish)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a cake pan of your choice (9-inch round or square works well).
  2. In a bowl, combine the chopped dates and baking soda. Pour the boiling water over the dates and let it sit for 10-15 minutes. This helps to soften the dates.
  3. In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the butter-sugar mixture, mixing until just combined.
  7. Fold in the soaked dates along with any remaining water and the finely ground pistachios.
