Shish Tawook is a popular Middle Eastern dish featuring marinated and grilled chicken skewers. Here’s a simple recipe for making delicious Shish Tawook:

Shish Tawook Recipe

Ingredients:

  • 1.5 lbs (700g) boneless, skinless chicken breasts, cut into cubes
  • 1/2 cup plain yogurt
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 tablespoon plain white vinegar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and black pepper to taste
  • Wooden skewers, soaked in water

Instructions:

  1. Marinate the Chicken:
    • In a large bowl, combine yogurt, olive oil, minced garlic, tomato paste, vinegar, cinnamon, allspice, coriander, cumin, smoked paprika, cayenne pepper, salt, and black pepper. Mix well to form a marinade.
    • Add the chicken cubes to the marinade, ensuring they are well-coated. Cover the bowl and refrigerate for at least 2 hours, preferably overnight for the best flavor.
  2. Skewer the Chicken:
    • Preheat your grill or grill pan over medium-high heat.
    • Thread the marinated chicken cubes onto the soaked wooden skewers.
  3. Grill the Shish Tawook:
    • Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is fully cooked and has a nice char on the edges.
  4. Serve:
    • Once cooked, remove the skewers from the grill.
    • Serve the Shish Tawook with flatbread, rice, or your choice of side dishes.
    • Garnish with fresh herbs, lemon wedges, or a side of garlic sauce.
