Goat Brain Masala:
Ingredients:
- 500 grams goat brain
- 2 onions, finely chopped
- 2 tomatoes, finely chopped
- 2 green chilies, chopped
- 1 tablespoon ginger-garlic paste
- 1/2 cup yogurt
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon garam masala
- Salt to taste
- 3 tablespoons cooking oil
- Fresh coriander leaves for garnish
- Lemon wedges for serving

Instructions:
- Prepare Goat Brain:
- Soak the goat brain in cold water for about 30 minutes. Gently remove the membrane covering the brain and cut it into small pieces.
- Parboil Goat Brain:
- In a pot of boiling water, add a pinch of salt and parboil the goat brain pieces for 5-7 minutes. Drain the water and set aside.
- Cooking Base:
- In a pan, heat oil over medium heat. Add chopped onions and sauté until golden brown.
- Add Aromatics:
- Add ginger-garlic paste and chopped green chilies. Sauté for 2 minutes until the raw smell disappears.
- Add Tomatoes:
- Add chopped tomatoes and cook until they are soft and oil starts to separate.
- Spice it Up:
- Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well and cook for a couple of minutes.
- Yogurt Addition:
- Whisk the yogurt and add it to the spice mix. Stir continuously to avoid curdling. Cook until the oil separates.
- Add Goat Brain:
- Gently add the parboiled goat brain pieces to the masala. Be careful not to break them. Coat the pieces evenly with the masala.
- Simmer and Garnish:
- Cover the pan and let it simmer for 10-15 minutes on low heat. Sprinkle garam masala and garnish with fresh coriander leaves.
- Serve:
- Serve hot, garnished with more coriander leaves and lemon wedges on the side.
