Spiced Delights: Grilled Prawns with Homemade Mixed Vegetable Pickle

Here’s a simple recipe for mixed vegetable pickle to accompany a grilled prawn dish:

Mixed Vegetable Pickle:

Ingredients:

  • 2 cups mixed vegetables (carrots, cauliflower, green beans, bell peppers, etc.), chopped into bite-sized pieces
  • 1 cup white vinegar
  • 1/4 cup mustard seeds
  • 1/4 cup fennel seeds
  • 1 tablespoon cumin seeds
  • 1 tablespoon coriander seeds
  • 1 tablespoon red chili flakes (adjust according to your spice preference)
  • 1 teaspoon turmeric powder
  • 1 teaspoon salt (adjust to taste)
  • 1/2 cup vegetable oil
  • 3-4 cloves garlic, minced
  • 1-inch ginger, grated

Instructions:

  1. Prepare Vegetables:
    • Wash and chop the mixed vegetables into bite-sized pieces.
  2. Sterilize Jars:
    • Sterilize glass jars and lids by boiling them in hot water for 10 minutes or running them through a dishwasher.
  3. Prepare Spice Mix:
    • In a dry pan, roast mustard seeds, fennel seeds, cumin seeds, and coriander seeds until fragrant. Allow them to cool, then grind them into a coarse powder.
  4. Make Pickling Solution:
    • In a saucepan, heat vegetable oil. Add minced garlic and grated ginger. Sauté until golden brown.
    • Add the ground spice mix, red chili flakes, turmeric powder, and salt. Mix well.
    • Pour in the white vinegar and bring the mixture to a simmer. Allow it to cool slightly.
  5. Combine Vegetables and Pickling Solution:
    • In a large mixing bowl, combine the chopped vegetables with the pickling solution. Mix well to coat the vegetables evenly.
  6. Fill Jars:
    • Pack the vegetable mixture tightly into sterilized jars, ensuring the vegetables are submerged in the pickling solution. Leave some space at the top.
  7. Let it Marinate:
    • Allow the pickle to marinate for at least 24 hours before consuming. It gets better with time as the flavors meld.

Grilled Prawn Dish:

Ingredients:

  • 1 pound large prawns, peeled and deveined
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Fresh lemon wedges for serving

Instructions:

  1. Marinate Prawns:
    • In a bowl, combine prawns with olive oil, minced garlic, smoked paprika, salt, and black pepper. Let it marinate for at least 15-30 minutes.
