Ingredients:
- 500 grams mutton, cut into small pieces
- 250 grams ladyfinger (okra), washed and trimmed
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 2 tomatoes, finely chopped
- 2 green chilies, slit lengthwise
- 1 tablespoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garam masala
- Salt, to taste
- 1/2 cup yogurt, beaten
- Fresh coriander leaves, chopped (for garnish)
Instructions:
- Prepare the mutton:
- Wash the mutton pieces and drain excess water.
- In a large skillet or pan, heat 1 tablespoon of vegetable oil over medium-high heat.
- Add the mutton pieces and cook until they are browned on all sides.
- Remove the mutton from the pan and set it aside.
- Prepare the ladyfinger (okra):
- In the same pan, heat the remaining oil.
- Add the trimmed ladyfinger and sauté until it is slightly browned and tender.
- Remove the ladyfinger from the pan and set it aside.
- Cook the onions and spices:
- In the same pan, add a little more oil if needed.
- Add the finely chopped onions and sauté until they turn golden brown.

- Add yogurt and ladyfinger:
- Once the mutton is cooked, add the beaten yogurt to the pan and mix well.
- Add the sautéed ladyfinger and stir to combine.
- Cook for a few more minutes until the ladyfinger is heated through and the flavors meld.
- Finish and serve:
- Sprinkle garam masala over the dish and give it a final mix.
- Garnish with chopped fresh coriander leaves.
