Strawberry and Mango Cake with Vanilla and Caramel Cream: A Decadent Dessert Recipe

Here’s a delightful recipe for Strawberry and Mango Cake with Vanilla and Caramel Cream:

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup diced strawberries
  • 1 cup diced mangoes

For the Vanilla and Caramel Cream:

  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup caramel sauce

For Assembly and Garnish:

  • Sliced strawberries and mangoes
  • Fresh mint leaves (optional)
  • Additional caramel sauce for drizzling

Instructions:

For the Cake:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate large bowl, cream together the softened butter and eggs until light and fluffy. Stir in the vanilla extract.
  4. Gradually mix in the dry ingredients alternating with the buttermilk, beginning and ending with the dry ingredients.
  5. Gently fold in the diced strawberries and mangoes until evenly distributed throughout the batter.
  6. Pour the batter into the prepared cake pan and spread it out evenly.
  7. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

For the Vanilla and Caramel Cream:

  1. In a large mixing bowl, beat the heavy cream with an electric mixer until soft peaks form.
  2. Gradually add the powdered sugar and vanilla extract, continuing to beat until stiff peaks form.
  3. Gently fold in the caramel sauce until well combined.

Assembly:

  1. Once the cake has cooled completely, slice it horizontally into two even layers.
  2. Place one layer of the cake on a serving platter or cake stand. Spread a layer of the vanilla and caramel cream over the top.
  3. Place the second layer of the cake on top and spread the remaining cream over the top and sides of the cake.
  4. Garnish the cake with sliced strawberries, mangoes, and fresh mint leaves if desired.
  5. Drizzle additional caramel sauce over the top of the cake for extra sweetness.
