Ingredients:
– 1 liter full-fat milk
– 1/4 cup sugar (adjust to taste)
– 1/2 tsp cardamom powder
– A few saffron strands (optional)
– Chopped nuts (almonds, pistachios) for garnish
Instructions:
1. Pour the milk into a heavy-bottomed pan and bring it to a boil. Keep stirring occasionally to prevent it from sticking to the bottom.
2. Once it starts boiling, reduce the heat to low and let it simmer. Keep stirring and scraping the sides of the pan.
3. Continue simmering and stirring for about 1.5 to 2 hours. As the milk reduces, it will become thicker and creamier.
4. After about 1.5 to 2 hours, add the sugar and cardamom powder. Stir well to combine.
5. Continue to simmer for another 10-15 minutes until the sugar is fully dissolved and the rabri thickens further.
6. If using saffron, soak it in a tablespoon of warm milk and add it to the rabri for a rich flavor and color.
7. Let the rabri cool down to room temperature. It will thicken a bit more as it cools.
8. Garnish with chopped nuts. Serve chilled or at room temperature.
