Turkey Grill with Stuffed Rice and Tomato Sauce Recipe

This recipe combines the rich flavors of grilled turkey, aromatic stuffed rice, and a tangy tomato sauce to create a delightful dish.


Ingredients

For the Grilled Turkey

  • 4 turkey breast fillets
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 garlic cloves, minced
  • 1 tsp paprika
  • 1 tsp ground cumin
  • ½ tsp black pepper
  • ½ tsp salt

For the Stuffed Rice

  • 1 cup basmati or jasmine rice
  • 2 tbsp butter
  • ½ cup onion, finely chopped
  • 2 garlic cloves, minced
  • ½ cup mixed vegetables (carrots, peas, and corn)
  • ¼ cup raisins (optional)
  • ¼ cup almonds or pine nuts, toasted
  • 2 cups chicken or vegetable stock
  • ½ tsp turmeric
  • Salt and pepper to taste

For the Tomato Sauce

  • 4 medium ripe tomatoes, blended or finely chopped
  • 2 tbsp olive oil
  • 1 garlic clove, minced
  • 1 small onion, finely chopped
  • 1 tbsp tomato paste
  • ½ tsp sugar
  • ½ tsp chili flakes (optional)
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

1. Marinate and Grill the Turkey

  1. In a bowl, mix olive oil, lemon juice, minced garlic, paprika, cumin, black pepper, and salt.
  2. Coat the turkey fillets with the marinade and let them sit for at least 30 minutes.
  3. Preheat a grill or grill pan to medium-high heat.
  4. Grill the turkey fillets for 4–5 minutes on each side, or until fully cooked. Set aside.

2. Prepare the Stuffed Rice

  1. Rinse the rice under cold water until the water runs clear.
  2. In a large pan, melt the butter and sauté onions and garlic until fragrant.
  3. Add the mixed vegetables, raisins (if using), and turmeric. Cook for 2–3 minutes.
  4. Stir in the rice and mix well.
  5. Pour in the chicken or vegetable stock, season with salt and pepper, and bring to a boil.
  6. Reduce the heat, cover, and simmer for 15–20 minutes or until the rice is cooked.
  7. Fluff the rice with a fork and mix in toasted almonds or pine nuts.


3. Make the Tomato Sauce

  1. Heat olive oil in a saucepan and sauté onions and garlic until softened.
  2. Add the tomato paste and cook for 1 minute.
  3. Stir in the blended or chopped tomatoes and bring to a simmer.
  4. Add sugar, chili flakes (if desired), salt, and pepper. Cook for 10–15 minutes until the sauce thickens.
  5. Garnish with fresh basil or parsley.

Serving

  • Place a portion of stuffed rice on a plate.
  • Lay a grilled turkey fillet on top.
  • Drizzle the tomato sauce over the turkey or serve it on the side.
  • Garnish with fresh herbs or a wedge of lemon for extra flavor.
