Ingredients:

For the crust:

– 1 ½ cups all-purpose flour

– ½ cup unsalted butter, cold and cubed

– ¼ cup granulated sugar

– 1 egg yolk

– 1-2 tablespoons ice water

For the filling:

– 2 ripe peaches, peeled, pitted, and sliced

– 1 ripe mango, peeled, pitted, and diced

– ¼ cup granulated sugar

– 1 tablespoon cornstarch

– 1 tablespoon lemon juice

For the glaze:

– ¼ cup apricot jam or preserves

– 1 tablespoon water

Instructions:

1. Preheat your oven to 375°F (190°C).

2. In a food processor, combine the flour, cold butter, and sugar. Pulse until the mixture resembles coarse crumbs.

3. Add the egg yolk and 1 tablespoon of ice water to the food processor. Pulse again until the dough comes together. If needed, add another tablespoon of ice water gradually until the dough forms a ball.

4. Transfer the dough to a lightly floured surface and gently knead it a few times to bring it together. Form the dough into a disc, wrap it in plastic wrap, and refrigerate for about 30 minutes.

5. In a bowl, combine the sliced peaches, diced mango, granulated sugar, cornstarch, and lemon juice. Gently toss until the fruits are coated with the sugar and cornstarch mixture. Set aside.

6. On a lightly floured surface, roll out the chilled dough into a circle of about 12 inches (30 cm) in diameter.

7. Transfer the rolled out dough to a tart pan, pressing it gently to fit the bottom and sides. Trim any excess dough from the edges.

8. Arrange the peach and mango slices in the tart shell, creating a pleasing pattern.

9. Place the tart in the preheated oven and bake for about 25-30 minutes, or until the crust is golden brown and the fruits are tender.

10. While the tart is baking, prepare the glaze by heating the apricot jam or preserves with water in a small saucepan over low heat. Stir until the jam melts and becomes smooth. Remove from heat.

11. Once the tart is baked, remove it from the oven and let it cool for a few minutes. Brush the warm glaze over the fruit to give it a beautiful shine.

12. Allow the tart to cool completely before serving. You can refrigerate it for a couple of hours if you prefer to serve it chilled.
